           Inactivation of enzymes

Inactivation of enzymes in the dough occur naturally or by some added substances at 80-95 degree centigrade.

This is  the phase where browning reactions and caramelization occurs. Maillard browning takes place above room temperature.it requires the presence of a reducing sugar together within amino acid. sugar caramelize at 160 degree centigrade.
